Hi everyone. My name is Janice Sigrist. I am from the US, and most people call me Miss Janice, as I have been a teacher for the past 38 years now.
In America I was a teacher and principal of French immersion schools, and I came to Shanghai in 2000 to be the head of an international school. I was very busy in education in China over my 21 years there, and I loved all of my time in China.
I was in Shanghai for 21 years and just a few weeks ago, on July 1, 2021, I returned to the US.
I have had such a fun time being back with my family, especially with my twin brothers Bill.
Every year he has a beautiful garden, and we have always talked about making pickles, using the fresh cucumbers he has grown.Today we did just that! We spent 4 hours this morning learning how to make pickles just like our mom used to. My family always had a big garden, and to assure that we had good quality food throughout the year, she would make pickles, jelly’s and jams, salsas, sauces, and more with her fresh produce.
Today we made sweet pickles and added some wonderful spices. To make pickles, you clean and cut the cucumbers.You need to sterilize your jars, by giving them a hot water bath on the stove.Then, you prepare something called a brine, to pour over the cucumbers.It is made out of apple cider vinegar, white vinegar, sugar, and pickling or very coarse salt.You need to boil it first.
When the jars are ready, you put in extra spices.We added jalapeño slices, which are a very spicy and hot pepper.We also added allspice, which is a wonderful spice from Jamaica, garlic cloves, and pickling spices.
Next we filled the jars with our cut cucumbers, added the brine, wiped the rims of the jars, added the lids, and then put them in the pot to boil for 15 minutes.
In 3 weeks they will be ready and we will be able to taste the reward of our efforts today. It was so exciting, and I just love discovering something newand finding new adventures.Life is too short not to have fun and learn at the same time!
