There’s an incorrect theory that oxalates can cause illness, especially kidney stones and gallstones, and that people should avoid high oxalate foods.
The truth is oxalates are nothing to fear. Oxalates or oxalic acid, are natural substances found in all fruits, vegetables, leafy greens, herbs and animal products. If you were to avoid oxalates, you would barely be able to eat anything. Even if oxalates were worrisome, celery contains significantly less oxalates than most other common foods. Further, celery juice heals the very problems that people attribute to oxalates, such as kidney stones and gallstones.
